In all honesty, I was skeptical reading all of the reviews of this soup and thought they all were too good to be true…. But this soup blew my mind.
It is kind of reminiscent of the Olive Garden’s Minestrone Soup, but it is lacking a few ingredients to be that. Needless to say, I am impressed and will absolutely make this time and time again.
And for the record… that is actually a cup of coffee and not a glass of wine. Sweet baby Jesus, its a miracle!
2- 14Oz Cans of Diced Tomatoes
2 Cartons of Vegetable OR Chicken Broth
4 Celery Stocks; diced
4 Carrots; diced
2 Zucchinis; diced
1/2 Large Purple Onion; chopped
2 Cups Baby Spinach; chopped
1- 15Oz Can of Cannellini Beans; drained and rinsed
2 Tsp. Fresh Sage; minced
2 Tbsp. Fresh Thyme Leaves
3 Cloves Garlic; minced
Salt & Pepper
Parmesan Cheese *optional
This is so simple… Basically prepare all of the veggies and herbs. After you drain and rinse the cannellini beans, mash half of them in a bowl while keeping the other half whole.
Heat some olive oil over medium heat.
Have your veggies on stand by….
Once oil is hot, add the onions, carrots, celery, and zucchini.
Stir in the garlic, thyme, sage, salt and pepper to taste.
Cook for 5 minutes or until tender.
Stir in diced tomatoes with juice.
Stir well to combine.
Stir in broth.
Bring to a boil.
Stir in baby spinach.
Then add both smashed and whole cannellini beans.
Cook for an additional 3 minutes or until the spinach is wilted.
You can either serve as is or with a little squeeze of lemon in each serving or sprinkled with fresh grated parmesan cheese.
